Thats actually not a spreadsheet. Its called Windows project manager.
They use gamebryo which allows one to import scenes and characters directly from the 3ds max to the engine.
On the 2 screens where he paced the video, its project manager, and the sound manager I think. =\
EDIT: I dont even know if thats a project manager. =S
