simple polypaint with slight hue shift in photoshop. took about an hour so far. the trick is not to be scared of bold color. I see so many 'mulchy 'looking polypaints around I use a hard edge brush for these ie focal shift to -100
You need uvs. Are you using a texture map or is this polypaint? If it's a texture map, first create auto-uvs in zbrush (it's very easy, you press one button), then up the resolution of your texture to 4096 or higher. If it's polypaint, use a texture map instead.
You don't need to project the polypaint. You just use polypaint to texture function and export the texture. Apply it to your low poly. Note: ZB uvs are vertically flipped in relation to other software so hit the flip v button before export.
Okay, I modeled a high res mesh in ZB, I then exported this and did a retopo. I then created a normal map; however, how do I now paint the model with the normal maps? If I have to work on the high res again in Zbrush to polypaint it, how do I export the polypaint? Thanks

The thing is Zbrush doesn't paint on UVs, so your UVs do not matter until you want to export it out. Polypainting pants directly on the polygons of the mesh, and each polygon is essentially a pixel. After you are done painting you bake the polypaint to your UVs.

Don't worry about having UV maps for your high poly when you polypaint. you can bake your polypaint over your low poly exactly the same way as u bake the normals. https://www.youtube.com/watch?v=dvNOCojBRoE
