Why not just use UDK Landscape? It's really handy both when it comes to sculpting the terrain as well as applying textures to it. You can very easily blend between tiling textures and add foliage and stuff like that. Honestly, unless you have a specific pipeline or workflow I don't see why you'd want to model the terrain…
