Try using Grand Soul Gems you nut. The effect of the enchant scales with the size of the Soul Gem. While a Common Soul Gem will only add say 3 health a Grand Soul Gem adds 20. It was the same way in Oblivion. Also if you were so invested in enchanting you surely put perks into the Enchanting tree? I don't even have any… -
