I was heavily into dirty gin Martinis for the last few years, especially with Martin Miller gin. These days I've moved onto Old Fashioned, preferably bourbon/whiskey (Elijah Craig and Rittenhouse Rye), or with Tequila from time to time (Patron).
I just mix simple sugar syrup with rum and lime or lemon juice. BAM!

very partial to the papa doble (hemingway's daquiri), especially in hot weather. squeeze the limes and the grapefruit fresh for best results. i also usually frappe the ice before adding the rest. i tend to scale up this drink to match the juice provided by half a grapefruit.
2 oz white rum
1 oz fresh lime juice
½ oz fresh grapefruit juice
¼ oz maraschino liqueur
1½ to 2 cups shaved ice
Combine in a blender and frappe until the drink is foaming. Serve in a large cocktail glass, champagne saucer, or goblet.
please note that a true hemingway daquiri contains no sugar. while certainly more tart, i find leaving out the sugar/simple really helps the finish stay nice and clean. with frappe ice, the papa doble is unbeatable.
and EQ knows i like a classic margarita with top shelf stuff, can't go wrong with good tequila+cointreau+lime
Oh and FYI to the poster saying you can't get Absinthe in the US, you can now, they just filter out the thujone(from wormwood) that was the banned chemical, apparently.

1/2 shot heavy cream
3 shots rootbeer, I like Virgils, or Sioux City Sarsaparilla
Top with fresh made whipped cream, made from left over heavy cream. If you're going to skip the whipped cream, use a full shot of heavy cream instead.
Me and the girlfriend have a Mojito night once a month. Slowly getting better at making them. Need to buy a crushed ice maker though as its a nightmare to do by hand and a blender just makes snow, so I discovered. Although I did find some crushed ice making bags that you place in the freezer that are pretty good.
Current recipe
Some Limes (cubed into 8ths)
Cane sugar syrup
Fresh Mint
Havana Club rum
crushed ice
Soda water
Place about 4-6 pieces of lime into tall plastic glasses and crush vigorously (I "acquired" some tall plastic glasses from an outdoor cocktail bar, its better for crushing things in, glass might break. If you havent got any, crush things in pestle and mortar and add to glass).
Add a few leafs of Fresh mint - Crush some more
Add a slug of Cane sugar (35ml-ish)
Add crushed Ice to brim of glass.
Add a good slug of Havana club (50ml+).
Mix with a stirrer
Top up with a drop of soda water

Mixing Instructions
