Trim Dynamic can get that effect. Keep in mind that most of the planar and trim brushes in Zbrush work off of the initial normal you start drawing from so you want to find a good angle that already exists in the slope and use that as the starting point. Don't get too hung up on the brushes. Experiment. Usually people use any of the clay/trim brushes (look in lightbox for other useful ones) Hpolish, Flatten, mallet, gouge, orb cracks, dam stamdard, slash 3. Try them all.
