Parallax is the worst from all of them. If you could minimize it to the needed areas it would be ok but otherwise, probably having a 100k tris static mesh can be cheaper. Anyways, if this is just for rendering and you don't need resources for other stuff, you could go fairly high on polies without too much performance…

When you say a ton of mistakes what do you mean? Because most modeling that happens for games tend to be quick, dirty and cheap. Unless you're making some really nice high-poly modeling etc , we usually take a lot of shortcuts if we can to make things go faster since it won't really be all that obvious to the players.
Beam me up! Spent a bit of time today scultping the vertical wood beam. This is one beam model seen from all four sides. I think I'm going to make another one that isn't so rough too and choose which one matches the degree of aging and damage that I want. After that I'll tackle the plaster parts.
