I didn't even think about the UV creation -- perhaps that is part of the problem as well. But there does seem to be a point at which, even if you are following these best practices (turning off history, or occasionally clearing it out), the tool simply bogs down regardless. Ellipses in perspective are tough cookies. One thing that I read that really opened my eyes was this: You should be able to fold the ellipse in half across its minor axis.
