Armanguy: We used to have "3d fightclubs" on Polycount where a few people talked on IRC, chose a time and a subject and whoever produced the better model in the time won.
I'd suggest to use ZBrush's "Decimation Master" tool to reduce the polycount of your final sculpt if 3ds Max, Maya or Blender can't handle it in their viewports while retopologizing.

the term to google is "texture atlasing" although it can refer to more than just 3D assets -it also includes for example 2D game sprite sheets. there is a polycount wiki for this.
