I was thinking about this last night. With Pixels and polygons as mediums, low res is the bread and butter. It requires you make the most of the tris and pixels to show what you need to, and often it will still be abstractly low res; but recognizable. :)

No, low/mid poly modeling will not be a thing of the past for a long time to come. Bear in mind that current gen games will still for some time to come be made by studios who consider it their bread and butter, and dont forget the handheld market either.

Im not a fan of FPS on consoles, I wont be getting this one, but I'll probably persuade a friend with a PS3 that its the best thing since slice bread so he can buy it so I can see what it looks like.
Subdivide once, but seriously just focus on making the planes of the face. Don't smooth it out so you can attempt to see a real face just yet. Focus on nailing down the planes first. Use trimDynamic like it's bread and butter.
Looks really good, the only thing i would say is that on some pieces the normal map looks to intense, it makes it look like a game and not like the real thing. also on the bread the inside looks generic, other than the oyster, that looks great!
