That sounds fun. The downside might be anything about the realistic env that's not 100% realistic VS not stylized about the stylized version would clearly standout more. However, if you nailed the execution it wouldn't be a problem.
Where do games fall that are attempting a truly "realistic" experience? If the lighting becomes super contrasted all the time and has a beautiful palette, is that realistic? Not trying to troll, just something I honestly wonder...
'Accepting it' means taking it without doing anything about it. 'Being realistic' means understanding the state our industry is in. You have to be realistic about conditions before you can try to fix them.
My advice would be to make sure you have realistic expectations, and an efficient workflow-- before introducing UDIMs at all, let alone more UDIMs. UDIMs aren't a magic fix-all patch, you still need strong fundamentals or you'll end up working wastefully, and producing assets that are unnecessarily heavy. Just my two cents!
