I found the ones on Pixologic to be pretty good for starting off. Same for the Eat3d dvd. Really it's just a matter of grasping the difference between the document and a tool, and perhaps a brief understanding of how the materials behave if the tool has no vertex colors.

It's probably easier to crit from ground level. Do you want an environment that you can walk around in or do you want an environment that looks good from certain pre-decided angles? Give it a think. Maybe just start blocking things out to get a feel of the composition and the world itself :)
