When i'm trying to select a set of faces in the Ortographic view, and i somehow manage to select only those faces that points to camera. Faces that point vertical are not selecting and i can select them only in perspective view. I already tried to uncheck "based on camera" feature in settings.
Set the extrude tool's curve settings to "selected", and it should work as expected. "Edit>Save settings" in the extrude tool's window should save the option going forward.

Does anyone know if there is a tool or technique I could use to make a triangle from 2 selected edges. I would normally use the append to polygon tool but selecting edges is really fiddily. I've also tried extruding the edge, collapsing it and snap it to a vert to manually make a triangle but it's not always easy to do it…
assign the same unwrap UV to all of the objects, use the material ID filter dropdown (bottom of UV editor window), select all the filtered faces and pack based on your selection i think to do it as part of an auto unwrap you'd have to script it
When using Textools in the UV editor, you get an orange selection box around your selected sub-objects. However, you cannot select/deselect anything inside that selection box once it's inside the box. Its always the same. Straighten what you want straight, locally relax the rest to follow that straight edge. You could pin it, or like i do, just exlcude it from your selection
