  Yep, you definitely can, it's in the display options somewhere I think, it'll show up as a thicker, solid edge when you turn out wireframe shade mode in the viewport.
  Sorry I can't tell you exactly where it is, it's been months since I last opened Maya and I don't have a copy here.

  i don't know max. but from MoP's description what you might be looking for is in :
  
  display > custom polygon display. tick : texture borders

  There's also a toggle in the UV editor window.
