freeze transforms. in the UV editor select everything and planar map it to view to clear any issues and start with a fresh base. Mark your seams again and press unfold.
If that still comes up like a mess, then you probably have some geometry issues you need to fix before UVing will work. Try using the mesh clean up function in Maya to see if you can salvage the mesh. If that doesn't work you might have to do some manual fixing of the geometry.

The thick white lines on your model are UV seams. You need to planar map your model again so that it's a single UV piece.
