Harford has posted an in depth tutorial series that you might be interested in

He covers the whole process from beginning to end and goes over a lot of the reasons why you would want to work in particular ways. High poly modeling, low poly creation, baking, materials, its all here. For free tutorials the production quality is pretty high. He recorded in two passes which is nice because he is talking over a sped up version of the modeling session so he doesn't get tripped up while modeling trying to explain what he is doing, like so many video tutorial-ist do.

I'm trying to figure out what you mean at 9:30ish when you say "I have the T key bound to the polytool optimize, which is a really neat tool...." Can someone tell me where this tool is? Thanks!

Thanks for the comments guys, Glad you found it useful. There is a quick tip video on my channel explaining the optimizer in more detail, which is what I have hotkey'd to T key.
