While there are still some Engines that require a completely closed mesh, those are few and far between. As a learner, and for practice, I would definitely float everything. Not only is it 100x easier to model, bake, texture, and unwrap, but as mentioned makes it possible to be rigged and animated.
My rule of thumb is "Get good, and if you happen to land a job at a studio that requires closed meshes, do it then." But don't break your balls trying to learn that way.
Nice low poly model. But you forgot that thing on back that you pull to load bullet into barrel for the first time. I forgot how is called in english (if somebody know i want to know )

why would you make your highpoly from your lowpoly mesh? id just start it with new shapes.
And I was confused because you said lowpoly, I thought you were going the old school way of texturing it
