I went for Valve. They are a financially secure company, which means they probably won't be turfing out staff anytime soon (which sounds like a fantasy tale these days), and it also means they can try new I.P.'s or new directions.
And it's not somewhere you would work at for one title, then move on to the another company. A person could really forge a (varied) career in a place like Valve.
valve or at an indy dev together with some talented people who know what they're doing. I really believe you don't need 50+ artists to make a AAA game with lots of content, a small team of people who know their shit will do. Valve seems to know this too !
Naughty Dog, I am a big fan of their work, particularly the Jak franchise. Never had a need to use Maya for any of the projects that I've worked on, but learned it in part because of the fact that its what they use.

Pixar's California Studio seems pretty amazing too. I recently went to an animation conference by one of their animators, Simon Allen. At one point he talked us through a slide-show of the place. It seems like a very creatively nurturing and just a generally awesome place to work. You can see a little bit of it here:

anyway... its kinda the only game company Id work at and not pursue other art on my own time. Obviously Mistwalker Studios harbours some of my favorite artists through time now, but im not impressed with their current work, I bet they are boiling somthing outstanding though..

I said "other", because I'd love to just be in a house in the middle of nowhere with an internet connection and some small village with basic amenities nearby... freelance from there, I think it'd be great (isn't this what Mr. Kite does? ).
That said, I really love the studio dynamic so I'm not sure how I'd fare for a long period indoors with no co-workers.
That said, if I was looking for a new job, I'd love to work at id, Epic, Blizzard, Valve, Naughty Dog, Insomniac... anywhere which has a good track record of solid games, made by people who love games, not just a company bought out by a big publisher destined to churn out tie-ins and sequels until the money dries up.
Also... aniceto, Pixar at the top of your list? Surely that'd just mean you model one thing per month then only one ends up being used in the final film, or something... I feel like film is much less rewarding than games in terms of getting your art seen by people.

Another dream studio: pre-90s implosion Sega America - Comix Zone team. Probably the type of pixel based project I'd happily apply for outside of Japan. Yeah, I'm going more for type of projects than rep or benefits a company offers. Though I'd rather apply to EA west coast than Ubisoft Montreal (however cool their projects are) because of low earnings to hi cost of living ratio.
sony santa monica on the god of war team, or perhaps Guerrilla or Grin in the EU, although for me its not the studio that draws me, but working on something that it kickass and you enjoy workin on but im good where I'm at for now.
Even though I'm very happy where I am right now, I said id...no question. I think Doom is the reason I make games, i'd be crazy NOT to want to work there :P

Of course I'm only basing any of my opinion on the quality put out, not the quality of life on the inside. . .

Capcom I love to death and was my first choice.. but I feel that if I had a chance to work on RE or SF or Mega Man or some other property I adore, I would come to loathe it... Even given complete creative control over the whole project. XD

Valve, no question. I love their games, the way they develop them, the way they market them, hell, I even love the Source engine even if it is a finicky little tard that refuses to work well with me.
I'd honestly enjoy getting the chance to work at any studio with a solid reputation (and isnt going to lay off any employees anytime soon)...So, all of the above
Well I'm currently working for Valve in a very open Job-Relation but I'd love to work for them fulltime and onsite. Gonna finish my BA (maybe Master aswell) first though. Most of these companies sound great, but hell, I'd love to go work on Half-Life or a Valve Wii Game or some of theyr other IPs...
I always wanted to work at id but I think they've changed dramatically and so have I.
At this point I think I'd really enjoy a 1 on 1 fighting type game studio. It's probably what I'll do with my portfolio in the future. I'm really enjoying Soul Caliber IV which is a lot of fun character wise. Can't wait to get my hands on SF4 and some others.
I'd go for a small-ish team bit like how Mobius Ent were shortly after I started there and early days of R* Leeds Small enough to have a proper family feel to the team and allows everyone to try their hand at everything if need be but large enough to do something that's top drawer content wise and knock out some gucci shit
While I'd love to work for any of those companies, as all of them have put out fun games in the past that I think would be a blast to work on, I'd have to say Epic. I just totally love the style and gameplay they put out and would love to be a part of that.
Having said that, I love the hell out of the project I'm on right now and really couldn't be happier. Unless we critically fail our economic saving throw I can't envision looking for another job.
Valve seems like they would be a pretty cool studio. My only big issue is that I would absolutely not want the secrets of upcoming Half Life games to be ruined for me.. I'm a die hard fan of the Half-Life storyline and universe. I wouldn't want to see the man behind the curtain.
ID SOFTWARE! by far! though i would be Extremely happy to work at any of them... i grew up playing Doom and Quake! and they will forever be my dream company to work at.
