It'll be just an experiment for me ... I also doubt that I can handle this work. Maybe I'll just try to model the rider on the left (would be complicated enough, I have only few experience in modelling humans/animals).
As said, I regard it more as a non-serious test...
Anyway, I model it in pose because I fear that I would spend too much work in the details which won't be visible from the original perspective (I donnot plan to model the backfaces properly). I want to model a few additional objects to see if my scene setting is acceptable. I am curious if it will become easier or harder if I begin to model objects that are partial hidden.
I can model the characters how they are posed and use up LOTS of texture space because they are not symetrical and mirroring them unconventionaly may take a while and my end result will be really nice looking
OR
Model 1 white horse, make symetrical, texture and rig it then duplicate it for the other rider.
Model 1 cougar, make symetrical, texture and rig it then duplicate it.
Model 1 rider... ETC
Then your end result will look a bit bland but you will finish earlier(if you have rigging experience) and you will have a couple of rigged models you can use for other things.

Good luck.
I say model it posed

Think about it.
