I'm trying to model my first Game Ready asset and I'm having some issues related to Baking, a lot of the edges of the model are getting distorted after the bake and I don't know if this issue is related to UV mapping, texture maps or the model low poly. I've already tried to redo the LowPoly version, redo the UV, bake in different programs but nothing solves the problem ;(

There are no edges in the real world as sharp as your invisible 90 degree one above. Either leave the bottom open or put a small bevel around the problem edge (a 45 degree one). Look at graphics that show normal projections for baking model textures to understand why this is so.
there are certainly other reasons why not to use super sharp edges but claiming they do not exist in the real world is certainly not one of them. there are sharp materials in reality, perfectly cut ones, even if the edge isnt 100% perfect on an atomic level, edges can be a lot sharper than texture resolutions would allow to portray
