Last time I used Mixer, it looks very similar to what's shown in this video:

Currently, on 2021.1.1 I'm not seeing a way to pack roughness/ metalness/ AO into a single map. Or how to change the format. Were those settings moved?

You should be able to edit this in the Advanced Texture Setup option below the dropdown for "Metalness Maps".
