I am looking for 3d game character tutorials that show the entire pipeline and workflow of creating a game character asset from start to finish. All I seem to find is sped up videos which do not help as I am a beginner. Does anyone have any recommendations? I don't mind if they cost or are free, I'm just looking for good updated material to learn from. Thanks.

Last year I had to create a character for a university project, so I invested in the following book written by an amazing artist Jahirul Amin:
https://www.amazon.co.uk/Beginners-Guide-Character-Creation-Maya/dp/1909414204/ref=sr_1_3?s=books&ie=UTF8&qid=1514202481&sr=1-3&keywords=3d+character+modelling
It comes with a link to some videos and files that you should be following as you go through the book, since the book just focuses on key aspects of character creation. But it has everything, including theory of anatomy for artists, really, really useful.
Good luck!
On Youtube he explains the full workflow:

For character sculpting and anatomy I suggest you the tutorials from CGMakers: https://cubebrush.co/nelmauro
I have created a free tool for Blender with someone else that automates the entire workflow for creating game assets you just have to create your high poly. The addon is not ideal for characters but for every static meshes it works great: https://youtu.be/-Fy7g3g6uCI
