Plane Sculpting Without Overhangs in Zbrush

I was wondering how I can sculpt a plane and have as a final result something that can be exported as a height map.
That would require my plane not to have any overhangs like this one http://i.imgur.com/O9x4Ry8.png (The yellow area would be lost detail in the final heightmap)
Is there any option to limit my sculpting areas to avoid creating overhangs?

Also I was wondering if there is any way to avoid the plane I'm sculpting to "roll up" on the sides like this http://i.imgur.com/jTavDU1.png ?

Thank you for your help :)

Regarding the "roll up" issue: There is probably a brush setting that prevents that, but otherwise, a quick fix would be to work on a bigger plane. It will give you some "padding" while you sculpt, then you simply have to reframe it before exporting your height map.

You can change the transform modifiers to work on a single axis only.
As for the mesh rolling up on the sides, setting to one axis should solve that. There other ways but I'm on my phone and can't explain without screenshots.

    Thank you a lot!
It works just like I wanted, very simple to use :D

Sorry to bring this issue up again, but I've noticed that this method does not solve my problem completely.

Since I'm able to work on one axis only I have a lot of limitations.

The optimal condition would be to able to modify on all axes, but it would stop going further once it has reached a 90° angle with the Z axis, for example with the Move tool currently I can only push things up and down, I'd be good if I was able to move on the horizontal plane too, just without creating any overhangs

Maybe you could just pay attention when modeling.

Small overhangs aren't a tragedy after all. The planar projection will simply ignore the hidden parts.

Yeah, that looks like the easiest solution.
Just wanted to consult if anyone here might now a solution to make it a bit more easy

EDIT: What's left now it trying to avoid the borders rolling up when working on all 3 axes

@JakBB I made a little tutorial about creating a tiling plane in zbrush that has padding so the borders won't be an issue.
