I am new to Max so I can't tell if it's a bug or a "feature" (and in that case pretty weird feature...).
When I scale UVs in any direction or uniformly the UVs snaps back to the original size. When it happened on one object I collapsed the Unwrap UVW and made a new one but when it happened on the second object this wouldn't help so I can't tell if it's related.
Any ideas?

UV mapping in Max in general is very frustrating in my opinion.
This was a bug that was fixed with a service pack: http://knowledge.autodesk.com/support/3ds-max/downloads#?rows=10&sort=score
You only need to download the latest service pack for your version of max and install.

Does freeform transform allow for uniform scaling, rotation snapping and moving islands in only specified axis? I can't test it right now.
uniform scaling: hold ctrl, you can also hold alt to scale from the center
rotation snapping: yes, it respects Max's angle snap toggle
moving in a specified axis: hold shift
you can also move the center point and rotate and scale in respect to it's location.
I strongly recommend installing the service pack.
