I wanted to start a personal project challenge. I want to create a character (in this case, a troll) from start to finish.
With this I mean that gathered some ref i will do some concept sketch, then I will proceed with the low poly modeling (600-800 tris in my mind)with hand painted textures, after that i'll rig it and do some animation (walk, run, attack) and finally add a particle effect for the regeneration ability of the troll.
I know this may sound stupid or ambitious, but I think I can learn something useful from this.

I don´t think it is stupid or ambitious. It is actually a great way for learning!
Try to learn as much as you can from each step of the process, you probably will see a great improve after that.
For the concepts, why you don´t start with simple character silhouettes?
This way you can find more interesting poses and proportions.
