I thought about creating more pixelated transitions onto the opposite colors (a little green on white, a little white on green). And trust me I do NOT like the darker head and neck, but I'm trying to stay loyal to the concept as much as possible. -

Be careful about having edges that sharp, if you are baking down to a low poly the bake won't turn out very well, especially if you are baking with smoothing groups and are using a game res texture. You'll have like 1 pixel of normal map detail for that tiny edge, and when it gets downrezed or mip mapped it will disappear… -

never ever move or scale or rotate a landscape (or terrain for that matter). It makes them go completely mental. You can bake curvature maps based on the geo (per vertex) as well as from a normal map (per pixel) so high poly only workflow is perfectly fine. You just use the same high poly mesh as the bake target. Just finished texturing a 20-odd part 18 million highpoly asset in Substance Painter. -

With xNormal/MikkTSpace and Marmoset (and UE4) you'll need to configure the MikkTSpace plugin in xNormal to recompute the bitangent in the pixel shader. In Mudbox, Modo, and Bodypaint you do not need to subdivide your mesh to paint on them as you are painting actual textures. It is my understanding that ZBrush requires you to subdivide your mesh because you are painting vertex colors rather than texture pixels.
