Generally the number of rays will impact things the most. So larger textures or higher quality bakes will take longer - especially outputs that use lots of bounce rays (ambient occlusion, cavity, etc).
Also recommended this too when I was using the baker. I think your issue is ray-distance related, but also maybe it could be these ngons causing the rays/cage to blow out oddly?

It's just that, ray distance, quick way to not get overlaps when baking. I feel like it should have an option to average the normals too since ray distance is kind of a fake cage, but it does not.
Uly, that does nothing in maya. It doesn't seem to use the cage to control the ray casting direction as Max does. The cage purely controls the ray cast length from what I can see.
