Instead of making one model every day you should do actual finished game models where you will learn something new in the process. Pick concepts of props where you feel like 1-2 areas will be a challenge to you and do that. Spend atleast a couple days on each asset. Rinse and repeat. This way in 2 years you will have some… -

I can vouch for choosing Product Design if you want to pursue environment art, it's very helpful, you'll develop a keen eye for form, functionality, light, you'll learn to draw, 3D is used a lot, and you might even be able to take some courses of figure drawing or anatomy to complement the rest. Compressed charcoal sticks seem to do just fine without fixative. I have drawings 4 or 5 years old done on news print and they adhered fine. i doubt willow would do so well.
