You should mention what platform/specs are you aiming for. Low poly can mean anything from mobile phones, current gen consoles, PC or the really retro stuff (PS1 or Nintendo DS). And if you're following a PBR/AAA workflow, you'll still need to model a High Poly version to save the normal maps info from.

I know several people I work with went to Sheridan. Also, practically a whole class was hired by Ubi Montreal for a PS2 project. I never went myself (went to CDIS, now Ai: Vancouver-Burnaby. Don't go there!!!!!), so I don't know if they're actually any good, or if it's just the name of the school that gets you noticed.
