Because most of that education (in my experience) is questionable at best. Those schools churn out graduates at a rate that's far in excess of what the industry needs. -

We know because the top 2 skins will be put into a case "released at a later date". That case doesn't necessarily have to be the next one to be released, but that is the assumption most of us have. -

I can't speak for anyone else, but I would work for a % of profits, depending on the release date of the game. I wouldn't want to work on something and receive a cheque two years later. -
