What version of Maya are you using? 2015 they added Unfold3D tech into the mix, and there were a lot of UI changes in 2017 Update 3. Mark Seams = Cut Seams Unwrap command = Unfold command Also, why just just unwrap in blender and bring it back into Maya. No one will be the wiser. :)

Tom Parker's hair tutorial is the best one out there : http://www.3dartistonline.com/news/2015/04/how-do-i-create-real-time-hair-for-games/ It may seem a bit tedious but there is no trick to make good realistic hair. You just have to spend a lot of time on it.

I would suggest blocking the whole thing first. Don't worry about edge loops or anything like that (if you're on 2015, you may not even need edge loops and just use the crease tool.) All that comes in the modeling stage. Block everything. Then model everything. Then texture everything.
