the model format thing is really up to the coders, and not your job. unfortunately many standard formats would be wasting too much memory for your needs. ms3d (milkshape 3d) and "blitz3d" both are binary and should contain all you need, specs are open, as well... but well you might as well write own format...
You're not really mixing bit-depths here. What it's doing is when you save an image with an alpha with DXT1 compression (thanks sprunghunt for the name, I'd forgotten) it multiplies your alpha into your RGB. Still three 8-bit channels, but containing four channels of information (three 8-bit and one 1-bit).

In addition to what some people have said, even if you enjoy character art more than environment art, you can probably find many ways to make the two meet up - statues and gargoyles, carved decorative pillars and structures, are all part of environments and can all contain interesting (if static) character models

Very nice forms but the thick dark lines between the planks really messes up the readability of them and for a ship they should be longer. Keep the values in mind. Contrast draws the eye so it should be contained to focal points. Your reference is a splendid example of that. Study it closely.
