There aren't any magic specific settings for a normal and AO bake. They are all dependant on so many different things. Each mesh will require a different setup each time.

Yeah questions like this come up all the time...there is no magic answer, everybody does stuff differently. Normal maps aren't going to be phased out anytime soon.
Just recently starting using Bodypaint, it's a magical program, the only disadvantage I've seen with it so far is it doesn't like your PSD to have adjustment layers or paths

Sculpting apps are not magic bullets. They dont give you a better grasp of anatomy, and they don't teach you to sort out your detail levels. That's all up to the artist.
Is your not using photoref.'s a personal challenge? If not, theres no harm in overlaying some nice detail.But thats just me. Lets see the specular do its magic!
