I'd do it in zbrush. Like this: make a copy of the subtool use dynamesh with a relatively low resolution to weld the new subtool into a single mesh now use zremesher to retopologise the final mesh into the desired resolution as a final step I'd bring it into maya and UV it. Your best bet at this point is probably to remove the webbed fingers, make yourself some individual ones and then use dynamesh to weld them onto the hand. I'd suggest your first step should be switching to a better shader - Red Wax isn't great for general sculpting.
I sculpted one tooth until I was happy with it ( Polysphere -> dynamesh -> movetool) then made the gums from two separate spheres and used the move tool to kinda get them into the shape and then placed the teeth into them. Basically use a lot of references :S I hope that explains it :)
Looks good to me so far. The only problem I see right now (besides its need of polishing) are the fingers. They are merged. It looks like you used dynamesh when they were too close. You should separate them before doing more changes.
No i'm using blender dynamesh, and I just quickly blocked out the major forms and used a higher density for the front of the face, probably should try to keep it even across the model. Yeah I definitely need to work on the eyes, guess it just comes down to practice.
What version of zbrush are you using? Sculptris / Triangles shouldn't cause that behaviour. Remesh/Dynamesh would give you a mesh that is mostly or all quads, but would change the topology. That may not be an issue though since a mesh coming from sculptri's wouldn't care about such things.
