Photoshop will let you paint on the model as well. I'm not a fan of it's camera controls, but for just doing quick work around seams it can get the job done.
Your easiest bet is to go the 3D paint route. There are quite a few apps that alow you to paint directly on the model, 3DCoat, Zbrush, Bodypaint... I think maybe the latest version of 3dsmax has some tools to do it as well? For simple rock stuff like gravestones, sometimes I go ahead and do the texture right on the hipoly…
Thanks very much for all of the advise. I'll have a look at the viewport canvas tool and see how that works for me. I watched a couple of the videos and it seems very useful. At least it seems I'm doing the right thing by splitting the hard edges on the UV map?
