Digital Tutors has some great Maya tutorials, learned a lot by watching them. Beyond that just play around with it and if you get stumped their's always the documentation that comes with it, and the net to answer most questions. I'd recommend gnomon workshops totorials. Not that I'm pro - far from it, but I've learnt a lot from them. I can't stand some of the digital tutors vids since the narrator has a really annoying voice (I think he talks through his nose). BuCC - slightly redicilous.

My best advice would be to watch and read EVERYTHING you can find. Even watching a simple tutorial you can sometimes find a nice little gem of an idea to improve your workflow, or even just a new way of thinking about things.
