UPDATE: I offset a couple of UV islands, connected some of them together. It seems better, so I am just going to use what I have. if anyone has some suggestions for improving this UV layout, that would be great :)
It turned out ok using the last layout. All the details are visible with 2K textures, so I am happy. I know the UV layout could be just a bit more optimized, but I left it the way it was.
