So its best that I do a small UV set for a small part of the texture and paint it over the model and not the whole model at once? I have already watched the tutorials for UVing, so I know how it works, Im only trying to figure out the best way to do it in this scene :)
I'm not a games modeler, but I'd suggest do follow DireWolf suggestion. UV'ing is a technique in it's self, spend some time on some tutorials, understand the tools in Maya UV editor, then when you feel comfortable you can move onto advanced UV tools and techniques. To tackle this I think it's a good idea to start thinking modularity. Meaning you model/texture smaller pieces and assemble them through out your scene.
