I need to tackle this soon, but I haven't done much yet. It doesn't sound impossible to me though. There are some example substances that are included for things like Leaves, wood and what not, I believe?
Also nothing stops you from just starting with a few bitmaps, like you would in PS. You don't have to be 100% procedural. You can then do things that are impossible in PS; scatter leaves around randomly, but in a tiling fashion for example.
I've been able to make some nice sci-fi and concrete/plaster textures from scratch with Substance Designer, but i never found tutorials or examples of good nature substances: grass, rocks, cliffs, etc. Do you guys have any links or tips for this kind of workflow?
