The strokes options that are available depend on the brush generally. For example, it looks like in the screenshot, you're trying to use the Rect stroke, but this would be available for clipping and masking brushes only. Ok, so the stroke is dependent on the Brush then. Thanks! I must have gotten confused when I was switching between a lot of Brushes and likely saw different stroke options.
