Sounds reasonable to go with 50-60k! When I did my numbers I just went with your original requirements: AAA, UE5, PC, cinematic quality and 2020's standards. Making a character to those standards would keep you busy for months for sure. Not necessarily fun to do all that. And yes you could go that high (in my experience).
All of which can be learned at traditional art courses at community colleges. I would never advise anyone to go to a 4 year school for game art. Even more so the art schools that end up costing $60k+
To be perfectly honest; NOTHING says 'ignore the noobs that need help' more than this. Their pics become small and overlooked. Your eyes go straight to the large images. It's simple design 101. This will only encourage more 'OMG AWESOME' posts.

My reason for advising you to use a much lower res base mesh to sculpt on had nothing to do with in-game triangle count. It was purely as a method of sculpting.
