I am confused about how to make these two work together. I've watched tutorials about how to make LOD meshes by deleting geometry within the UV islands but none of these tutorials mentions the lightmap UVs. When I'm creating the LODs my lightmap UVs just become a broken mess. Am I missing something here?

Tyson Murphy's weapon tutorial is pretty 10/10. I'd also really recommend Tobias Koepp's stylized dungeon tutorial, it runs you through the whole pipeline and not just for assets but tileable materials and some scene layout/lighting parts too. I learned a lot from!
Also, baking normal maps is a pretty common subject for tutorials- I believe the Polycount wiki article on it goes into some depth, for instance. Are you having trouble finding tutorials that help you understand normal maps conceptually, or is it that you can't find anything on how to do it in Sketchup?
Agreed, the art you used as reference had more detailed shapes then the model you made. You do have the dedication to model so I would advise to follow some tutorials, the one posted above seems really good Im going to try that tutorial as well.
