IMO I would probably try and keep the proportions of your sketch cept maybe tad longer arms. Also modeling the hands like you have them at an angle is a little tough especially if you wever freeze transformations. However if you are comfortable then I say go for it!
Centaurs weapons tri count seems really low for what appears to be 30% of his silhouette his belt (which is more of a buckle) is 200 tris and it's barely seeable in-game.
