I don't have a one, but I had a similar problem where 3D programs (Max, XSI, Mudbox etc) only worked one specific monitor on a dual monitor setup. I manged to fix it by setting the primary display to different monitors in the display properties. Although this is with ATI's 1600 card.
Depends on the game engine and how it compresses data. For example Unity does increase the vertex count when I add UV2 but it's not double. One mesh goes from 1030 to 1104 when I add UV2. Only 74 verts added.
