Bridge needs four edges and a closed mesh to actually work. Append polygon tool is faster

as polypaint is actually vertex color, this is un avoidable. a workaround would be splitting the polygons as teriyaki suggested

You put a Turn To Poly modifier in the modifier list, and select limit polygon size to 3.
