To use a different texture set on the head, usually there's no need to detach. Detached heads can be used to allow swapping them for character customization. But you then want to either hide the seam with a shirt collar, or else match the vertex normals. If you don't you'll see a shading seam because the vertex normals… -

In your video, you're texturing your terrain using the custom color picker each time you want to paint sand or grass. That's one of the hardest and longest way around to make your terrain. Not really good neither because when you swap layers you loose your previous color and you can't pick it from terrain again I think.…
