Ya those eat 3d zbrush tuts are awesome. Well worth the investment and they give a few techniques for handling retopo stuff. Ace's method works good too because GOZ is awesome, only issue is whether your max can handle the polycounts.

I've seen a lot of novice threads for 3D art on Polycount before and a lot of them have suffered without a clear 2D vision of what they're going for. I really recommend, at a minimum and as slightly tiring as it is, an aesthetic/style board to guide your piece going forward.
They were modeled in 3ds Max (learnt from Autocon's Uncharted 3 posts on polycount). Basically I just poly modeled the macro shapes and sculpted tiling textures in Zbrush/Substance Designer. Not as awesome-looking as sculpted rocks but a lot more efficient performance-wise :D
Welcome to Polycount, Digital tutors has great tutorials especially for beginners, asw ell as eat3d and thegnomonworkshop if you don't mind paying. However if you don't want to pay there is many free tutorials out there, there is a whole bunch of good ones on 3d-total.com in there tutorial seciton
