Hello! For some reason Maya's UV editor isn't letting me scale in the Y-axis. Every time I try to use it it just scale in the x. I've checked my tool settings and my constraints are off and no video or search has been able to help me so far. Is there anything I should try to help me resolve this?
Was just gonna post that it didn't give me any errors and walk away crying. But then! At the last try! Success! I deleted "pluginPrefs.mel", "userPrefs.mel" and "windowPrefs.mel" and executed your code above :D And it worked! Please see attached .gif below.

Maybe try flipping the green (and maybe the red) channel for your stitch normals. I'm just gonna go cry myself to sleep. Any advice on understanding how to create the shapes you need? I tend to get bogged down for hours trying to create some of the more complex high poly forms and shapes, getting them to smooth with no pinching and so forth.
