You can do that with hotkeys. E, S = Extrude Scale. E, Z = Extrude and move along the Z. (this assumes default controls) Seems kind of difficult to do with the active tools, though. If I get time I might bring it up with the developers.
hello guys i just did some sculpts in Z Brush. :D i will post the texture soon! but right now i need some sleep LOL. I have been learning Z Brush and UDK by myself so yeah... :) :D
Two options I can think of. You could modify a copy of the material to change the z order. Or, create a second camera parented to the primary camera and use another render layer with the z order adjusted.

I already Have Z brush but I keep hearing Zbrush used in tandum w/ other programs like 3dmax. should I invest in getting 3d max as well, or does z brush cover all my modeling needs? I have 4.0.
So...just add Z to the end of your name. Well, if I go with the first letter of my first name, J, and the first letter of my alias, I, and end with a Z, I get...jiz... perhaps I'll just stick with my alias for now -.-
Looks like a sorting problem. Not sure how UDK handles this, but typically to solve this you'll want to force the renderer to draw the triangles in the order you want. Try disabling Z-write and/or Z-read in your materials.
I was playing 2v2 with my brother, we do Z&Z and it seemed like every protoss pair we played massed zealot, its funny how easily roaches kill them off, or blings.
Programs are usually much worse with the z-buffer than games, in my experience anyway. I don't know max, but I would try scaling the model up, or looking for an option to increase the z-buffer accuracy.
