You can use Daz3D as a reference to practice anatomy (its free to use). You can turn off textures and dial in muscle mass. Also the sculpture you chose to use has pretty much perfect balace. Check out the posing center line.
Looks like you are off to a good start! Sculpting in a pose is not a good idea if you are trying to develop.
